*whimper*

Dinner: Grilled chicken and mushrooms smothered in mozzerella, topped with avocado and more mozzerella, with a tiny bit of lime. Bake 15 minutes. OMG. Dessert: untested, but theoretically baked egg substitute and ricotta with vanilla and butter flavor and cocoa--it tastes exactly like chocolate cake batter, but richer, so I think I'm on the right track--topped with strawberry jello cut with half'n'half, fat free, but still--topped with whipped strawberry-cocoa ricotta.

I can't believe I can do this to myself and still lose weight.

If the cake works, would you please send me the recipe with technique, proportions, et al? South Beach is very close to a proper diabetic diet, and we are always looking for good nibbles that we are allowed to have.

If it's bad, I should be able to guess what I did wrong.

One thing the SBD has a LOT of is "1/2 C ricotta cheese, one packet artificial sweetener, and..." Frozen, it's passable as an ice cream, and not bad straight out of the tub. My favorites are "...and 1/2 t vanilla, 1/4 t butter flavoring, and some cinnamon," "1/2-3/4 t vanilla," and I haven't tried 1 T cocoa powder and a few semisweet chocolate chips," but that's probably good, too. I didn't like "1/2 t almond extract, top with toasted almonds," because I don't like amaretto flavor, and probably the same for the lemon extract and grated lemon for garnish.
