Boil chicken chicken in water, onion, chicken broth, lemon pepper and chicken season, one apple cut into bite-sized wedges. Do not, next time, add cranberries and cashews. Bleah. 1/3 fill large baking dish with dry brown rice, cover with liquid. Shred chicken breasts, let bake.
Thaw six chicken breasts, an hour ago. Split lengthwise.
cut five granny smith apples into bite-sized bits. Slice one orange bell pepper into thin strips, wash two pints of mushrooms, slice remaining onion into strips.
Arrange chicken strips on rice. Stuff all possible areas with mushrooms. Sprinkle liberally with lemon pepper. Cover with onions, apple chunks, and bell pepper. Wrap in tin foil. Bake at 400 for 45 minutes or so.
That took a while, but it was a good idea :)
