Dinner last night--

Chicken Marsal. I'd been wanting to experiment with chicken and yogurt, and in my 1000 Chicken Recipes book this was the first one, and it sounded nice--basically, baked chicken breasts dunked in yogurt and curry, breaded with some mint and chopped pistacio (and bread crumbs, of course). Sauce was a mixture of yogurt, a little lemon, and a lot of mint, pistacio and cilantro. Served over brown rice, which wasn't part of the recipe, but it seemed to belong.

I ran out of fresh mint, so I tore open a few pure peppermint teabags. Dried mint is a lot harsher than fresh mint, which probably didn't help. I also had to use some dark multi-grain bread, to keep things diet-friendly.

Verdict--uh...if someone made this for me, I'd eat it, but while tasty, I don't think it was worth the work. There would have been a lot less work if I'd found pre-shelled pistacios...
