A chocolate-chipolte dessert fondue would be tasty. Maybe with some spices to make it taste like mexican chocolate.

I think a base of milk chocolate with a little bit of bittersweet would be a good place to begin--The last time I made a dark chocolate fondue I was really disappointed :( Too bitter.
